Thai Beef Salad

From my good friend, Mandy.

Ingredients for dressing

  • 1/4 cup mint
  • 1/4 cup coriander
  • 2 cloves garlic
  • 2 T soy sauce
  • 1 T fish sauce
  • 2 T lime juice (or lemon juice)
  • 30 g brown sugar
  • About 1/4 red chilli, seeds removed, to your taste
  • 2 shallots or half a red onion

Ingredients for salad

  • Iceberg lettuce
  • Cherry tomatoes
  • Beef

Method

  1. Blitz all the dressing ingredients in a small food processor.
  2. Place lettuce leaves, and cherry tomatoes on a platter.
  3. Cook beef to medium rare, and let stand.
  4. Slice beef and place over salad.
  5. Drizzle dressing over salad.

Alternative

Place sliced beef over hot singapore noodles and then drizzle over the dressing.

Asian Coleslaw

Coleslaw Ingredients

  • 1/4 red cabbage
  • 1/4 white or Chinese cabbage
  • 1 red pepper
  • 2 medium carrots
  • 1 small red onion or 2 spring onions
  • 1 handful fresh coriander, chopped
  • 1 cup crispy fried noodles
  • 1/2 cup dry roasted peanuts

Dressing Ingredients

  • 2 T salad oil
  • 2 T rice vinegar
  • 1 T soy sauce
  • 1 T Vietnamese sauce (or sweet chilli sauce)
  • 2 t sesame oil
  • 1 t honey
  • 1 t ginger, minced
  • 1 clove garlic, crushed

Method

  1. Finely slice cabbage, pepper, carrot, and onion and combine in a bowl.
  2. Mix through the coriander.
  3. Mix all the dressing ingredients together and drizzle over coleslaw.
  4. Toss to combine.
  5. Place fried noodles and peanuts on top.

Hayley’s Lunchbox Pasta Salad

Ingredients

  • 3 cups of shaped pasta
  • 12 cherry tomatoes
  • 5 strips of smoked streaky bacon, chopped
  • 1 clove of garlic, chopped
  • 1/4 cucumber, chopped
  • Salt & pepper
  • Lemon
  • Fresh basil

Method

  1. Cook pasta and drain.
  2. Fry bacon and garlic.
  3. Mix pasta, bacon, tomatoes, cucumber, and basil together.
  4. Add a drizzle of olive oil, a squeeze of lemon, and salt and pepper to taste.
  5. Slice thinly as needed.
